I hate wasting food. And since Baby V has started eating solids I feel like I am wasting a lot of food. And yes, I can’t help it when she throws half her food on the floor but I try to minimize the food waste as much as possible. One thing that really bothers me is the fact that the grocery store by my house has only the giant containers of full fat plain greek yogurt, and after you open it, the yogurt needs to be used in 5 days. And I’m sorry but Baby V cannot eat ~32 ounces of yogurt in 5 days (I would actually be quite concerned if she could). My husband doesn’t eat yogurt, and I could probably eat the full fat yogurt, but I prefer to continue to eat my non-fat greek yogurt at lunch so I can limit my calories and save my saturated fat intake for fancy cheeses (it’s all about balance …right?).
So anyways…I decided to use some of the extra yogurt to make a little something I am going to call Berry Yogurt Bark. It turned out to be a yummy frozen treat that I can slowly indulge in, one piece at a time, or serve to guests when they come over. It is super easy, takes about 5 minutes and looks so pretty.

If you don’t like the fruit I use or are not a nut fan, you could use my recipe as a template and change out some of the ingredients to make it your own. Oh and one word of caution. If its a hot summer day, I wouldn’t take this recipe outside unless it is going to be eaten immediately. It can get rather messy if it is sitting out and becomes unfrozen…

Berry Yogurt Bark

Ingredients
1 Cup Plain Greek Yogurt
1-2 Tablespoons Honey*
1/2 Heaping Cup of Sliced Strawberries and Blueberries
1 1/2 Tablespoons Sliced Almonds

Directions
Line a 9×23 in glass baking dish with parchment paper. Add yogurt to a small mixing bowl and stir in honey. Gently fold berries into yogurt mixture. Spread out over parchment lined baking dish with a spoon. Sprinkle with almonds. Cover and freeze for about 4 hours or until frozen solid. Break into pieces after frozen and serve immediately.

*I like it with 1 tablespoon of honey but my husband thinks it is not sweet enough and needs 2 tablespoons…so I am leaving the exact amount up to your taste preferences :)

Spiced Peach and Berry Fruit Bake

We all know that fruit is good for you but did you know that berries are good for your brain? Research has shown that increased intake of certain berries is associated with slower rates of memory decline. One study found that berry intake appeared to delay cognitive aging by up to 2.5 years. In addition to brain health, berries are currently also being studied for cancer prevention and improving cardiovascular health.

Not only are berries good for your health….they are also delicious and make a great dessert.

Last weekend I had to think of a quick and easy dessert to take to a family dinner and I wanted to bring something at least fairly healthy. So my first thought was “baked fruit.”  I  went to the grocery store and bought a bunch of fruit and baked it with orange juice, spices and a little bit of brown sugar. I ended up buying way too much fruit (I always overestimate) and it wouldn’t all fit in the pan, so the apples and pears get to be used for packed lunches. My dessert turned out delicious and it reminded me a little bit of pie filling, but really fresh, fruity and flavorful homemade pie filling. I topped mine with a squirt of reddi-wip for a nice finishing touch :)

 

Spiced Peach and Berry Fruit Bake

Ingredients
8 oz (~2 cups) Frozen Cranberries
11 oz container (~2 cups) Fresh Blueberries
6 oz container (~1 1/2 cups) Fresh Raspberries
6 Peaches, Sliced into Wedges
1 Tablespoon Brown Sugar
1 Cup Orange Juice
1 Teaspoon Ground Cinnamon
1/2 Teaspoon Nutmeg
1/2 Teaspoon Allspice
1/2 Teaspoon Vanilla Extract
Reddi-wip for topping

Directions
Preheat oven to 350. Place fruit in 9×13 inch glass baking pan. Heat orange juice in microwave for ~1-2 minutes, until hot. Add brown sugar and stir until dissolved. Add in vanilla and spices and stir. Pour over fruit in glass pan and bake in oven for ~35 min. Remove from oven and scoop into small bowls or martini glasses. Top with reddi-wip if desired. Serves 8.

Strawberry Dessert Bites 007

For Memorial Day I wanted to make a quick, easy and healthy bite size dessert. I found a lot of recipes for stawberries filled with a cheesecake type filling that looked delicious, but had entirely too much saturated fat, calories and sugar for my liking. But I loved the idea of filling a strawberry to make a bite sized treat. Strawberries are full of fiber, vitamin C, and multiple other vitamins, minerals and antioxidants. Research shows that eating strawberries may decrease cancer risk, improve cardiovascular health and boost cognitive functioning so you can definitely feel good about eating these tasty treats! For my filling I decided to use neufchatel cheese (like cream cheese but with 1/3 less fat), nonfat plain greek yogurt to cut the fat and calorie content further, a small amount of sugar (1 teaspoon) and pure vanilla extract. Everyone seemed to enjoy them and they were so simple and easy to make.

Strawberry Dessert Bites

Ingredients
1 -16 oz box of Fresh Strawberries (approx 20 berries)
4 oz Neufchatel Cheese
1/4 Cup Nonfat Plain Greek Yogurt
1 Teaspoon Sugar
1/2 Teaspoon Vanilla Extract
Directions
Clean the strawberries and remove the center of each strawberry with a small paring knife to make a hole for the filling. See picture below. Combine remaining ingredients (cheese, yogurt, sugar and vanilla extract) together in a bowl and mix well. Once well blended, scoop filling into each berry with a small spoon. If you want it to look more professional and fancy you can try using a cake decorator or icing bag. (I just scooped the filling in with a spoon because I was in a rush…. that is why mine look a little messy) Refrigerate until ready to serve. Super easy!
